Chicken Caprese is a mouthwatering recipe that's a perfect spring or summer meal. The combination of mozzarella, tomatoes, fresh basil and perfectly grilled chicken can't be beat. Plus, add some balsamic vinegar for a little pop to make this meal one you'll want to make again and again. Easy to prepare and a favorite that's sure to help keep you on plan!

For those new to the plan, weighing your food is an integral part of the program; it's one of the critical elements. If you want to be successful, you need to ensure that each meal has been weighed according to the guidelines. And we're not talking about "close enough." We mean EXACTLY those amounts! So forget about using a measuring cup or even eyeballing it—you need a food scale!

We've worked hard to make sure that all recipes listed are approved for the plan.

The recipes on this site are intended for those on plan; however, they can easily be adapted to a low-carb or keto lifestyle. If you are following a ketogenic or low-calorie diet, you can enjoy many recipes found here to help keep you on track for your weight loss efforts.

Lean & Green Caprese Chicken Ingredients

  • 2 tsp Olive Oil
  • 2 medium Garlic Cloves Minced
  • 2 cup Grape Tomatoes Cubed
  • 3 tbsp Balsamic Vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Fresh Basil Chopped
  • 1 lbs Boneless Skinless Chicken Breast Butterflied
  • 2 cup Reduced-Fat Mozzarella Cheese Shredded

Lean & Green Caprese Chicken Instructions

  1. Butterfly the chicken breast(s) and pound very thin (1/8 to 1/4 inch thick)
  2. Heat olive oil in a large skillet over medium-high heat. Add garlic and stir for one minute.
  3. Add tomatoes, balsamic vinegar, salt and pepper. Cover and cook for 8-10 minutes until tomatoes have softened.
  4. Remove from heat and stir in fresh basil.
  5. Grill or sauté chicken breasts over medium-high heat for a few minutes on each side until fully cooked and juices flow clear.
  6. Transfer to a baking sheet and turn oven to broil.
  7. Top chicken with tomato mixture and mozzarella cheese, similar to how you would top a pizza.
  8. Place baking sheet into oven to broil for 2-5 minutes or until the mozzarella is melted.
